🥔 Korean Banchan Potatoes (Gamja Jorim)

📌 Ingredients:

  • 2 medium yellow or red potatoes (peeled and cut into 1-inch cubes)
  • 1 tbsp vegetable oil (or sesame oil for more flavor)
  • 1 tbsp soy sauce
  • 1 tbsp dark soy sauce (optional, for deeper color)
  • 1 tbsp sugar
  • 1 tbsp honey or corn syrup
  • 1 tsp minced garlic
  • ½ cup water
  • 1 tsp toasted sesame seeds
  • 1 stalk green onion (chopped, optional)
  • Salt and pepper to taste

🍳 Instructions:

  1. Prep the potatoes: Peel and cut the potatoes into evenly sized cubes (about 1-inch pieces). Rinse and soak them in cold water for 5–10 minutes to remove excess starch, then drain.
  2. Cook the potatoes: Heat oil in a non-stick skillet over medium heat. Add the potatoes and sauté for 3–5 minutes until lightly golden.
  3. Add seasoning: Add garlic, soy sauce, dark soy sauce (if using), sugar, and water. Stir to combine and bring to a simmer.
  4. Simmer and glaze: Let the potatoes simmer uncovered over medium heat until the sauce thickens and the potatoes are tender, about 12–15 minutes. Stir occasionally to coat the potatoes evenly.
  5. Add sweetness: Once the liquid has mostly reduced, drizzle in honey or corn syrup. Stir to glaze the potatoes.
  6. Garnish and serve: Turn off the heat. Sprinkle with sesame seeds and green onions (if using). Serve warm or at room temperature.

📝 Tips:

  • Want it spicy? Add a teaspoon of gochujang or a pinch of red pepper flakes.
  • This dish can be served hot or cold, making it perfect for meal prep.
  • Use baby potatoes for a cuter presentation — just halve them instead of cubing.
