  • Bell pepper: 70 grams
  • Onions: 60 grams

  • Cucumber: 70 grams
  • Spinach: 50 grams
  • Tomato: 250 grams
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon
  • Cumin powder: 1/2 teaspoon
  • White bread slices: 2
  • Water: 35 milliliters
  • Olive oil: 1 tablespoon
  • Dried rosemary: 1/4 teaspoon
  • Dried parsley: 1/4 teaspoon
  • Pumpkin seeds: for garnishing

Preparation

  • In a dish, add 70 grams bell pepper, 60 grams onions, 2 teaspoons garlic cloves, 1 tablespoon olive oil and mix it well.
  • Preheat the oven to 400°F/200°C and bake for about 30 minutes.
  • On a board, place 70 grams cucumber and remove seeds from it.
  • Now, cut it into pieces and keep aside.
  • On a board, place 50 grams spinach and cut into pieces.
  • Transfer this into a bowl, add chopped cucumber, 250 grams tomato, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon cumin powder and mix it well.
  • Cover it with cling warp and rest for 10 – 15 minutes.
  • In a bowl, add 2 white bread slices, 35 milliliters water and soak for 5 minutes.
  • In a blender, add baked veggies, prepared mixture, soaked bread, 1 tablespoon olive oil, 1/4 teaspoon dried rosemary, 1/4 teaspoon dried parsley and blend it well.
  • Garnish with pumpkin seeds.
  • Serve.
